1. Sous Chef (Japanese Cuisine)
Requirements:
- Male / Female, 28-36 years old (flexible based on skill & maturity)
- Min. 5 years experience in Japanese Cuisine in leadership or Sous Chef role
- Proven skills in Sushi (cold kitchen), washaku (hot kitchen) & central kitchen
- Experience in high-volume & fast-paced restaurant
- Familiar with HACCP standard and strict kitchen hygiene protocols
- Menu development skills
- Cost control knowledge (food cost, portion control, & wastage management)
- Skilled in kitchen workflow management to ensure smooth service during peak hours
- Passionate about Japanese cuisine and eager to continuously improve skills
- Creative, detail-oriented & quality-driven
- Willing to adapt to SOPs, vision, & brand identity
- Culinary diploma or equivalent
- Ability to train and develop Junior staff
